My Favorite Part of Halloween



   The older my boys get, the more interesting (or gross) their jack-'o-lanterns get.  The mummy took a good two hours of patient drawing and scooping, my youngest decided his needed "firey" eyes, and there appears to have been a murder (too much Alfred Hitchcock lately.) 




   The best part has to be the seeds...




   Roasted with a little olive oil and coarse salt--the best part of Halloween.

My husband and kids love pumpkin seeds as well. We still have 2 pumpkins we need to cut open and get the seeds out. Of course I am also looking forward to making pumpkin butter as well. :)

This will be the first year that I have attempted pumpkin butter. I will be trying this recipe: http://tidymom.net/2011/pumpkin-butter/. I had bought a jar from the Great Smokies visitor center and we finished it in about a month! So, I thought I would try to make a couple of jars. :)
